Blue Stilton And Celery Soup

Ingredients:


3 ounces blue stilton cheese

3 ounces bacon -- 6 ounce

6 ounces celery -- chopped

2 ounces onion -- chopped

1/2 ounce cornstarch

1 ounce butter

1 1/2 cups chicken stock

1 1/2 cups milk

1 teaspoon salt and pepper to taste

1 dash paprika
 

Preparation / Directions:


Chop bbacon finely. Put in pan heat gently; then drain. Stir in celery onions and butter and cook slowly, stirring well until celery and onions are colored. Sprinkle in cornstarch and cook for 1 minute. Gradually add milk, pepper. Bring to boil and simmer for10 minutes. Strain or puree in a blender. Reheat, crumble in cheese and sprinkle with paprika. Makes 4-6 servings
