Smoked Salmon Cheesecake

Ingredients:

1/4 cup unsalted butter
2 cups sourdough breadcrumbs
1 cup gruyere cheese
1 teaspoon dill
2 tablespoons butter
1 cup onion
1 1/4 pounds cream cheese
1/2 teaspoon salt
1/3 cup cream
4 large egg
1/2 pound smoked salmon
2 tablespoons sour cream
2 tablespoons caviar
 

Preparation / Directions:

COMBINE MELTED BUTTER, BREADCRUMBS, HALF OF THE GRATED CHEESE, AND DILL-MIX WELL PRESS ONTO BOTTOM AND UP SIDES OF A 10-INCH SPRINGFORM PAN COVER AND CHILL HEAT BUTTER IN A SKILLET, OVER A MEDIUM FLAME ADD ONIONS HEAT AND STIR FOR 4-5 MINUTES UNTIL SOFTENED, WITHOUT BROWNING REMOVE FROM HEAT, COOL COMBINE THE CREAM CHEESE, REMAINING GRUYERE CHEESE, SALT, AND CREAM IN A MIXER BOWL-MIX WELL ADD THE ONION MIXTURE AND EGGS-MIX WELL FOLD IN THE SALMON POUR INTO THE PREPARED CRUST BAKE @ 325 DEGREES FOR 60 MINUTES, UNTIL SET REMOVE FROM OVEN AND ALLOW TO COOL COMPLETELY GARNISH WITH SOUR CREAM AND SALMON CAVIAR SERVE AT ROOM TEMPERATURE OR SLIGHTLY CHILLED
