Red Beans And Rice With Sausage

Ingredients:


1 pound red kidney beans

3 quarts water

2 cups onions

1 cup bell pepper

1 cup celery

2 tablespoons garlic

1 tablespoon parsley

2 tablespoons salt

2 tablespoons black pepper

1 tablespoon chili powder

2 pounds cajun sausage
 

Preparation / Directions:


Wash beans well then drain. In a 6 quart pot, put beans and cover 3" with water (about 3 qts.). Allow beans to soak for several hours if possible. Chop an vegetables to a fine consistency. After soaking, heat beans on high heat until boiling. Take out Y2of beans and reserve. Add onions, bell pepper, celery, garlic, and parsley. Stir well. Bring to hard boil, reduce heat to maintain boil. Be sure to stir often and add water to maintain level as needed. Add salt, black pepper, chili powder, reserved beans and sausage and simmer boil for 2 hours. Serve over rice.
