Meal In A Pie

Ingredients:


1 package pie crust mix

2 medium potatoes

4 medium carrots

1 medium onion

1 can stewed tomatoes -- 16 oz

3/4 cup ketchup

1/2 cup oats -- rolled (raw), not instant

1/2 teaspoon salt

1/2 teaspoon basil leaves

1/8 teaspoon ground allspice

1/8 teaspoon pepper

2 large eggs

1/2 cup water

1 pound ground beef
 

Preparation / Directions:


Prepare pastry and line pie plate.Peel veg and place in food processor.Add 1 cup stewed tomatoes,1/4 cup catsup,oats,and spices. Process till finely chopped. Add 1 lb ground beef and 1 egg to veg mixture. Separate 2nd egg;add the white to the veg mixture, saving yolk. Process meat-veg mixture till combined. Turn into pie shell. Top with second crust. Add 1 tsp water to yolk, brush over pastry. Cut slits in crust. Bake at 350 for 50-60 minutes. Combine remaining stewed tomatoes and catsup in saucepan and heat till boiling. Top pie slices with sauce.
