Carrot Casserole

Ingredients:


10 large carrots -- peeled

1/4 cup onion -- chopped

4 tablespoons butter

2 tablespoons flour

1 cup milk

1/4 teaspoon salt

2 tablespoons sugar

1/8 teaspoon nutmeg
 

Preparation / Directions:


Steam carrots for 20-25 minutes, until tender, then mash. Meanwhile, saute the onion in the butter until soft. Add flour and mix well, then slowly add the milk and seasonings. Add the carrots and combine well, mixing evenly. Spoon into a greased cassarole and bake for 1/2 hour at 350.
