Broccoli Casserole

Ingredients:


6 cups coarsely chopped fresh broccoli

1/4 cup water

1 can cream of mushroom soup (10 3/4-oz) -- undiluted

1/4 cup shredded sharp Cheddar cheese

1/4 cup mayonnaise

1 1/2 teaspoons lemon juice

1/3 cup buttery cracker crumbs
 

Preparation / Directions:


Combine broccoli and water in a 2-quart casserole; cover and microwave at HIGH for 4 minutes. Drain. Place broccoli in a lightly greased 2-quart casserole. Combine soup and next 3 ingredients in a medium bowl; stir well. Spoon mixture over broccoli. Cover with heavy duty plastic wrap, and microwave at HIGH 4 to 5 minutes. Sprinkle cracker crumbs over top. Rotate dish, and microwave at HIGH 4 to 5 minutes. Makes 6 servings.
