Pineapple Upside-Down Cake

Ingredients:


2 tablespoons butter

1/3 cup brown sugar -- packed

1 tablespoon water

1 can pineapple slices -- (8 ounce) drained and halved

4 medium maraschino cherries -- halved

1 1/3 cups all-purpose flour

2/3 cup sugar

2 teaspoons baking powder

2/3 cup milk

1/3 cup butter -- softened

1 large egg

1 teaspoon vanilla
 

Preparation / Directions:


Preheat oven to 350 degrees. In 9 x 1 1/2-inch round baking pan with melted butter, stir in brown sugar and water. Arrange pineapple and cherries in the pan and set aside. In a large bowl, combine flour, sugar and baking powder. Add milk, butter, egg and vanilla. Beat with an electric mixer on low speed until combined. Turn up to medium speed and beat for about a minute. In baking pan, pour batter over pineapple and cherries. Bake until done. Cool on wire rack until ready to serve. To serve, loosen sides and invert. Approximately 30 minutes.
