Jane's Chocolate-Mayo Cake From Mix |

Ingredients:
1 Package chocolate cake mix -- duncan hines w/o pudding |
1/2 cup mayonnaise -- hellmanns inchreal inch |
1 1/3 cups water |
2 large eggs |

Preparation / Directions:
I used Devil's Food mix for this. Preheat oven to 350 degrees F. Prepare two 8 inch pans by greasing and flouring (I use cocoa powder instead of flour) Mix all ingredients on low speed for 30 seconds, until blended. Beat on medium speed for 2 minutes. Divide batter evenly into the prepared pans. Bake at 350 F for 25 to 35 minutes. Cake is done when tester comes out clean and cake springs back when lightly touched in center.
Cool in pans for 10 minutes before removing cakes.
I was told by Dunkin Hines (I believe) that this yields 5 1/4 cups of batter. This was about 10 years ago, so it may no longer be an accurate quantity if mix was significantly reformulated.
