Grandma Evelyn's Coffee Date Cake

Ingredients:


1 cup stoned and chopped dates

1/2 teaspoon baking soda

1 cup coffee -- (liquid)

3 tablespoons butter

1 cup sugar

1 large egg -- stiffly beaten

1 cup nut meats -- broken

1/4 teaspoon salt

1 1/2 cups fishers blend pastry flour

3 teaspoons baking powder
 

Preparation / Directions:


Sprinkle soda over the chopped dates, add the boiling coffee, cool. Cream butter with 1/2 cup sugar, add egg, remaining sugar, coffee, dates, nuts, salt and flour sifted with baking powder twice. Bake in a moderate oven (375 F) 30 to 35 minutes. Spread with a Coffee Butter Frosting.
