Ginger Pear Upside-Down Cake

Ingredients:


2 tablespoons butter or margarine melt in 8-inch square pan

1/2 cup brown sugar -- packed

1 teaspoon ginger

2 teaspoons grated lemon rind

2 teaspoons grated orange rind

2 medium pears -- 1/4-inch thick sliced, fresh peeled or canned

---Batter:

1 1/2 cups soft whole wheat (or white) flour

1/3 cup melted honey

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup oil

1 large egg

2/3 cup sweet or sour milk
 

Preparation / Directions:


Mix brown sugar, ginger, grated rinds together in a small bowl. Sprinkle half of mixture over butter in pan. Arrange pear slices over sugar mixture in pan. Batter: Mix together with large spoon in bowl until all the ingredients are blended. Pour over pear slices as evenly as possible. With the tip of the spoon, gently spread to corners of pan. Sprinkle the second half of the sugar mixture over the top of the batter. Bake 30 minutes in 400 degrees oven. Immediately turn upside-down on serving plate. Let pan remain a few minutes to allow sugar mixture to run over cake. Serve warm.
