Orleans House Salad With Green Onion Dressing

Ingredients:

2 cups torn lettuce leaves

1 cup shredded red cabbage

1 cup shredded white cabbage

3 medium carrots -- shredded

2 ribs celery -- diced

1 medium red bell pepper -- diced

1 medium green bell pepper -- diced

1 medium yellow bell pepper -- diced

2 medium tomatoes -- cut in quarters

3 pieces radish stars

---dressing---

1 large egg yolk

1 cup chopped green onions

3 tablespoons white vinegar

1 tablespoon Creole mustard

1/4 teaspoon garlic clove chopped

1/2 teaspoon sugar

1/2 teaspoon salt

1/2 teaspoon white pepper

1 tablespoon Worcestershire sauce

1 cup vegetable oil
 

Preparation / Directions:


NOTE: This is the house salad served at Orleans Cajun-Creole restaurant in West Los Angeles, California. *** SALAD *** 1. Put all ingredients except tomatoes, radishes and dressing in salad bowl. 2. Spoon 4 tablespoons dressing over salad; toss (add more dressing to taste). 3. Garnish with tomatoes and radishes. *** DRESSING *** Combine all ingredients in screw-top jar; shake well.
