Oysters In Smoker Cooker

Ingredients:


36 medium oysters - enough to cover screen

1 teaspoon salt oysters in their own juice

---water pan seasonings---

1 cup white wine - dry

1 tablespoon liquid smoke

1 medium lemon - cut up

1 tablespoon parsley - dried

1 quart oysters -- juice of

3 pounds charcoal - 2 or 3 lbs

3 pieces hickory or pecan wood - 2 or 3 small pieces
 

Preparation / Directions:


Soak wood in water. Light charcoal. Let it burn down, then place wood on charcoal. Put water pan with wine, liquid smoke, parsley, and lemon in smoker cooker. Add juice from oysters. Fill about half full with water. Place oysters on greased screen on grill and put in smoker cooker. Close cooker and cook for about 1 to 2 hours, but check it every now and then.
