Cajun Meatloaf - 3

Ingredients:


---spices---

2 pieces bay leaves -- crumbled

1 teaspoon salt

1 teaspoon cayenne pepper

1 teaspoon seasoned pepper blend

1/2 teaspoon ground cumin

1/2 teaspoon ground nutmeg

1/4 teaspoon fresh thyme leaves

---finely chopped vegetables---

1 cup white onions

1/2 cup celery stalk

1/2 cup carrot

1/2 cup green bell peppers

1/4 cup green onions

3 large garlic cloves

---saute---

1 tablespoon olive oil

1 tablespoon diet spread with yogurt -- or buttermilk

---sauces---

3/4 tablespoon Tabasco sauce

1/4 tablespoon Thai chili pepper with garlic sauce

1 tablespoon Worcestershire sauce

1/2 cup evaporated skim milk

1/4 cup ketchup

1 pound ground beef 15% fat

1 1/2 pounds ground turkey breast

1/4 cup egg substitute -- plus

1 medium egg -- slightly beaten

1 cup fresh whole wheat bread crumbs

1/2 cup Italian bread crumbs
 

Preparation / Directions:


Combine spices and set aside: bay leaves, salt, cayenne, black, and white peppers, cumin and nutmeg. Chop vegetables and garlic in the food processor: onions, celery, carrot, bell pepper, green onions and garlic. Heat a large sauté or wok with the oil and the spread. Sauté the vegetables for about 4 minutes. Add the spices (bay thru thyme); and the sauces. Stir to combine. Sauté mixture until it starts sticking excessively, about 6 minutes, stirring occasionally and scraping the bottom well. Stir in milk and ketchup. Continue cooking about 2 minutes, stirring occasionally. Set aside to cool about 10 minutes or more. In a large bowl, mix ground beef and turkey. Add eggs, cooked vegetable mixture and bread crumbs. Mix by hand until thoroughly combined. CHOICE: *Put into a large loaf pan and bake 25 minutes at 350F; then increase oven to 400F and bake 60 minutes. *Or put in the center of a baking pan, shape mixture into loaf. This method is faster and the sides will brown. Bake uncovered at 350 for 25 minutes. Raise heat to 400 and continue cooking 35 minutes longer.
