Baked Bean Creole

Ingredients:


1 large onion -- chopped

1 clove garlic -- crushed

2 Cup oil for frying

2 medium green bell peppers -- diced

3 medium celery stalks -- sliced

2 tablespoons flour

1 can tomatoes

1 can tomato paste

1 dash basil

1 dash rosemary

2 cups cooked beans of your choice

1/2 cup breadcrumbs

1 Cup water
 

Preparation / Directions:


Sauté onions and garlic lightly in oil. Add pepper and celery. Fry for several minutes until tender. Stir in the flour and add tomatoes. Add tomato paste and herbs and beans. Mix in breadcrumbs. Add a little water if too dry. Spoon into oiled casserole and sprinkle breadcrumbs on top. Bake for 30 minutes at 350F. Serve with rice and salsa sauce. Toronto Vegetarian Association
