Red Cabbage With Apples And Wine

2 pounds red cabbage -- shredded
6 tablespoons butter
1 pound green apples -- quartered
1/2 pound onions -- sliced
2 cloves garlic -- finely chopped
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon thyme
1/4 teaspoon caraway seeds
1 teaspoon grated orange rind -- (opt.), up to 2
1/4 cup brown sugar -- packed
2 tablespoons wine vinegar
1 1/4 cups dry red wine

Preparation / Directions:

Cook cabbage in butter in covered pan for 5 minutes. In a casserole dish, layer 1/3 of the cabbage, apples, onions, garlic and spices. Repeat three times until all those ingredients are used. Sprinkle brown sugar over top and add vinegar and wine. Cover and bake at 300 - 350 degrees F until tender. Add more wine if necessary. Note: once you've made it, you can adjust the seasonings, etc. It is absolutely one of our favorites with pork or duck.
