Stuffed Portobello Burger

A great alternative to a regular hamburger for those who are trying to eat light or vegetarian.
 

Ingredients:


2 large portobello mushrooms

4 medium sundried tomatoes, reconstituted, sliced

1/2 medium red pepper, thinly sliced

1 teaspoon garlic chopped

1 teaspoon onion powder

1 small shallot, minced

1 teaspoon olive oil

1/4 cup sherry

4 tablespoons goat cheese

2 medium Kaiser rolls or large hamburger rolls
 

Preparation / Directions:


Heat olive oil in small skillet. Saute shallot and garlic in oil until fragrant. Add sundried tomatoes, red peppers and onion powder. Cook until starting to soften. Add sherry, cook until sherry has evaporated. Brush mushrooms with olive oil. Crumble cheese over mushrooms, top with pepper mixture. Bake at 425 for 5-7 minutes.
