Broccoli Frittata

Ingredients:


1 pound trimmed broccoli -- cooked but crisp

1/4 cup olive oil -- or vegetable oil

1/2 pound fresh mushrooms -- sliced

2 cloves garlic -- minced

1 dash salt

3/4 teaspoon freshly ground pepper

8 large eggs -- beaten

1/2 cup freshly grated parmesan cheese
 

Preparation / Directions:


Preheat oven to 350 degrees F. Cut the broccoli into bitesized pieces. Heat the oil in a 10 inch visions skillet, then add the broccoli, mushrooms, and garlic. Stir, cover and steam for 3 mminutes. Add the salt, pepper to the eggs and pour over the broccoli. Sprinkle with the parmesan cheese and bake, uncovered, for 25 to 30 minutes or until set. Six servings. You can vary this recipe by decreasing the amount of salt and, before baking, add to the eggs, 1/2 pound grated monterey jack or muenster cheese and 1/3 pound salami, cut into thin strips. Works great, too, with liftover meat. You can add additional chees on top and melt under the broiler in versatile visons cookware.
