Mashed Potato Pancakes

Made with mashed potatoes...
 

Ingredients:


1 cup mashed potatoes

1/2 cup flour

2 teaspoon baking powder

1 cup milk

2 large eggs (separated)
 

Preparation / Directions:


Slightly heat mashed potatoes (I use a microwave for 20 seconds). Separate eggs and whip the whites. Add yolks to mashed potatoes, mix baking powder with the flour then add alternately to the potatoes with the milk. Use electric mixer and mix until you have a smooth batter. Fold in beaten egg whites. Fry with medium heat in a frying pan with a small anount of oil. I turn them when small bubbles appear, add additional oil between batches. Eat with butter or sour cream or even syrup. Enjoy!
