Rum Runner's French Toast

Ingredients:


3/4 Cup melted coffee ice cream

3 large eggs beaten

1 tablespoons rum

1/4 Teaspoon cinnamon

10 Slices raisin cinnamon bread

8 Scoops coffee ice cream
 

Preparation / Directions:


Combine melted ice cream, eggs, rum, and cinnamon in a bowl. Beat with a wire whisk until blended. Dip raisin bread into egg mixture, coating well. Grill on an electric griddle set at 300 degrees, using butter, until brown on each side - about 5 minutes per side. Slice bread slices into wedges and place 5 wedges on each plate and top with two scoops of coffee ice cream. I serve maple syrup on the side and add bacon strips to each plate.
