Luscious Cheese Toast

Ingredients:


3 tablespoons 1% low-fat cottage cheese

1/8 teaspoon almond extract

2 teaspoons sugar

1 tablespoons low-sugar apricot jam -- or flavor of choice

1 slice whole-wheat bread
 

Preparation / Directions:


Using a food processor or blender, mix the cottage cheese, almond extract, sugar, and jam together. Lightly toast the bread and spread it with the cottage cheese mixture. Place the toast on a baking tray and broil until the cheese begins to brown lightly.
