Zucchini Bread

Ingredients:


3 large eggs

3 Teaspoons vanilla

1 Cup Oil

2 Cups sugar

2 Cups shredded zucchini

3 Cups flour

3 Teaspoons cinnamon

1/4 Teaspoon baking powder

1/4 Teaspoon baking soda

1 Teaspoon salt

1 Cup finely chopped nuts
 

Preparation / Directions:


Lightly grease the bottom of two glass loaf dishesand Set aside. Combine eggs, vanilla, oil and sugar until fluffy. Stir in zucchini and mix well. Add flour, cinnamon, baking powder, soda and salt. Stir until well blended. Stir in nuts. Divide half the batter between 2 loaf dishes. Cover with wax paper. Microwave one loaf at a time. Place on inverted saucer in microwave oven. Microwave at medium high (70%) 5 minutes. Remove wax paper. Microwave at medium high (70%) until wooden pick inserted in center comes out clean, 5 to 6 minutes. Let stand 5 minutes. Remove from pan. Repeat with remaining loaf.
