Yeast Pita

Ingredients:


2 cups plain flour

1 cup wholemeal flour

1 teaspoon salt

2 teaspoons granulated yeast -- raised

1 1/4 cups warm water -- up to 1.5

1 teaspoon sugar -- honey or treacle

1 tablespoon oil -- optional
 

Preparation / Directions:


Disolve sugar in the warm water, add the yeast and leave to proof (should froth). Add flour and salt. Knead the dough on a floured board until elastic about 5-10 minutes. Place the dough in a bowl and leave to rise in a warm place for 30 min. Punch down then briefly nead again. Divide into 8 balls. Roll the balls out into rounds 6-7inches in diameter. Leave to rise Place an iron skillet or similar in the oven on the oven rack (This helps keep the temp. up) and preheat the oven as hot as it will go. Cooking one at a time place the dough rounds onto the skillet in the oven. They will puff up and be cooked within a few minutes. They do not need to turn brown. Use a spatula or tongs to remove them.
