Terre Scheel's Mom's Jalapeno Cornbread

Ingredients:


1 cup cornmeal

3/4 cup flour

1 teaspoon sugar -- up to 2

4 teaspoons baking powder

1 teaspoon salt

1 can creamed style corn

1 1/2 cups sharp cheddar cheese -- shredded

3 medium chopped pickled jalapenos -- up to 5

1 medium chopped pimientos with juice

3 large eggs

3 tablespoons hot oil -- (warmed up in muffin pan)

1/4 cup milk -- upto 1/2 cup
 

Preparation / Directions:


Spray muffin pan with Pam, or non-stick spray. Mix all dry ingredients together. Then all of the others together only until mixed. Heat the oil in the muffin pan in a 350 degree oven. Add the oil to the mixture. Spoon mixture into muffin pan and bake at 350 for about 40 minutes, or until brown. These are especially yummy when they're just cool enough to eat. Nice and crispy! Enjoy then, because tomorrow they won't be crispy anymore, although they're still yummy. As usual, use discression regarding the jalapenos. Use only what you and your guests will tolerate.
