Swiss Breakfast Bread

Ingredients:


---First you make the Muesli:

1 1/2 Cups old-fashioned oats

1 1/2 Cups water

2 Cups shredded unpeeled apples (Granny Smith)

1 1/2 Cups or 9 oz. pitted prunes -- chopped

2 Tablespoons honey

2 Tablespoons lemon juice

1/2 teaspoon cinnamon
 

Preparation / Directions:


Mix together and refrigerate overnight. I put my quartered and cored apples (3) in food processor with prunes and chop them together. Then in the morning mix together the bread. You have enough Muesli to make this following recipe twice. 1 1/2 cup packed brown sugar 1/2 cup vegetable oil 2 eggs 1 tsp. vanilla 2 cups Muesli 1 1/2 cups flour 1/2 tsp. salt 1 tsp. soda 1/2 tsp. nutmeg 3/4 cup chopped walnuts Preheat oven to 350 degrees. Grease 9x5 inch loaf pan and sprinkle bottom and sides with oats. In a mixing bowl, beat sugar, oil, eggs, and vanilla. Stir in 2 cups Muesli. Blend in remaining ingredients. Mix until just well-blended. Pour into prepared loaf pan. Bake 55-60 minutes until pick inserted comes out clean. Cool in pan 15 minutes, then loosen edges and turn out on a rack and cool. My mailman brings me some unusual surprises. One day I received a package from Judy with this bread inside baked in two tiny little glass loaf pans. Judy and I share a love for depression glass and these little pans are a unique addition to my collection. But the bread in them, wow! So moist and rich.
