Oatmeal Molasses Bread

Ingredients:


2 cups boiling water

1 cup oatmeal

1 teaspoon salt

4 tablespoons shortening

2/3 cup molasses

1 package yeast -- dissolve in 1/4 cup water

5 1/2 cups flour
 

Preparation / Directions:


1. Pour boiling water over oatmeal. Add salt and shortening. Stir and cool. 2. Once cooled, add molasses and yeast dissolved in water. Knead in flour (adding up to 6 cups) to make a soft dough. 3. Cover and let rise until double. 4. Grease and flour 2 small bread pans. Turn dough out onto floured surface and kneade briefly adding more flour if necessary to prevent it from becoming sticky. 5. Divide dough into 2 loaves, shape and put in pans. Let rise until doubled. 6. Bake at 350F for 35-40 minutes. Remove pans and brush tops with butter while still warm.
