Mexican Cornbread

Ingredients:


1 cup corn meal

2 large eggs

3/4 teaspoon salt

1/2 teaspoon baking soda

1 can cream style corn

1 cup milk

1 pound ground beef

1 medium Onion -- chopped

1 medium bell pepper -- chopped

1 medium jalapeno pepper -- chopped

1 teaspoon garlic

1 Cup shredded cheese
 

Preparation / Directions:


Brown ground beef, onion, bell pepper, jalapeno pepper, and garlic. Drain off fat. Mix corn meal, eggs, salt, baking soda, corn, and milk. Pour half of corn meal mixture into a hot iron skillet with a small amount of oil. Spread meat mixture on top of corn meal mixture, and top with remaining corn meal mixture. Bake in 325 degree oven for 1 hour.
