Lucia Buns Aka Lussekatter

Ingredients:


1 package active dry yeast

1/4 cup water -- warm

3/4 cup milk

1/2 cup butter or margarine

1/2 cup sugar

2 large eggs

1/4 teaspoon salt

1/4 teaspoon powdered saffron

4 cups flour

---FOR BRUSHING:---

1 large egg

2 tablespoons water
 

Preparation / Directions:


Dissolve yeast in warm water and set aside. Warm milk, add butter to melt. Place all above ingredients in a mixing bowl using 2 cups of the flour. Mix for 3 minutes using mixer. Add rest of flour and beat with wooden spoon. Work dough on board, adding a little flour for easy handling. When smooth and shiny put in a bowl and let rise to double in bulk. Turn out on floured board and shape into Lussekatter. *** Let rise on cookie sheet and brush with egg and water mixture before baking. Put a raisin in each curl and bake at 450 degrees for 10 minutes. Makes about 4 dozen rolls. *** To make a Lussekakkar shape, roll into a rope and then roll ends in opposite directions to make coils and look like the letter "S". Note: I make this in my bread machine on the 2.5 pound loaf, on basic dough setting. If done in the bread maker, do not melt the milk just add softened butter cut into cubes. Also the yeast needs to be increased to 3 teaspoons and the flour reduced to 3 3/4 cups.
