Jalapeno Corn Bread

Ingredients:


5 tablespoons unsalted butter

2 tablespoons diced jalapeno chiles

1 cup whole kernel corn

1 cup sweet red onion

1 cup milk

2 large egg

1 cup flour

1 teaspoon baking powder

1 teaspoon kosher salt

1 tablespoon sugar

1 cup yellow cornmeal

1/2 cup cheddar cheese
 

Preparation / Directions:


Butter an 8-inch square baking pan combine chiles, corn, and onions in another bowl, combine eggs, butter, and milk-mix well combine with corn mixture-mix well sift together baking powder, flour, salt, and sugar combine with cornmeal-mix well combine with cheese and corn mixture stir just until barely moistened and lumpy (will be tough if over mixed) pour into greased pan bake @ 400 degrees for 35-40 minutes serve hot or at room temperature
