George's Hoecakes

Ingredients:


1 cup white cornmeal

1/2 teaspoon salt

1 cup boiling water

1 tablespoon vegetable oil -- (optional)
 

Preparation / Directions:


Mix the cornmeal and salt in a bowl. Stir in the boiling water. The mixture should have a stiff oatmeal-like consistency. If it is crumbly, add the oil. Cover the bowl and set it in a cool place overnight. When you are ready to fry them, take approximately a 1/2 cup of the mixture and either shape it with your hands into a patty, or use the back of a spoon to flatten and shape it in a lightly greased frying pan or griddle. Fry until lightly browned. Serve with butter and honey! Note - I added the oil to my hoecake batter. I also tried them both immediately after mixing the batter and the next day. If you fry them immediately, they will be crunchier than if you allow the batter to "gluttonize" overnight. They are tasty either way.
