2 1/2 teaspoons dry yeast
1 pound bread flour
1 tablespoon bread enhancer -- or wheat gluten
2 tablespoons sugar
1 1/2 teaspoons salt
1/4 cup butter -- cubed
1 large egg
3 large egg yolks
1/2 teaspoon lemon oil -- or extract
1 1/2 teaspoons vanilla
3/4 cup water
1 large egg -- beaten with
1 tablespoon milk
1 tablespoon coarse sugar crystals -- if desired
---evening before--- -- soak
1/2 cup yellow raisins -- in
1/4 cup rum -- covered at room temperature

Preparation / Directions:

Place all ingredients in bread machine ,except raisins, according to manufacturer's directions; process on "DOUGH" setting. Set timer for 30 minutes. Drain the raisins and pat dry, add to the machine when the timer goes off or follow your machine's direction. When dough is completed, remove from machine, cover and let rest abouth 15 minutes. Divide dough into 3 sections and roll each section into a long roll, braid and coil around to fit into 10 inch pan. (I use a 10 inch terra cotta flower pot base that I seasoned first; these work great). Cover and let rise until doubled. Brush top of braid with mixture of beaten egg and milk, sprinkle with sugar.
