Austrian Bread

Ingredients:

2 1/2 teaspoons active dry yeast
1 1/3 cups bread flour
2/3 cup rye flour
1/3 cup wheat germ
2 tablespoons vital wheat gluten
1 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon rosemary
1/2 tablespoon oil
3 tablespoons fruit concentrate -- or honey
1 cup water -- + 1 T if at high altitude
 

Preparation / Directions:

(not necessarily authentic, but inspired by the memories of great bread that I used to eat every day when I lived in Austria.) use white bread setting, light
