Balsamic Biscuits With Raisins and Cinnamon

Ingredients:


2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 tablespoons packed light brown sugar

1 teaspoon ground cinnamon

1/3 cup vegetable shortening

3/4 cup milk

2 tablespoons balsamic vinegar

1/2 cup raisins

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/3 cup vegetable shortening

3/4 cup milk

2 tablespoons balsamic vinegar

1/2 cup raisins
 

Preparation / Directions:


Preheat oven to 450 degrees. Grease or spray a 9-inch round cake pan. In a large bowl or food processor with metal blade, mix flour, baking powder, soda, salt brown sugar and cinnamon together. Add shortening and work it in with your fingertips or a pastry blender or pulse until mixture resembles bread crumbs. Add milk, vinegar and raisins. Stir with a fork or pulse until mixture holds together. Turn out onto a floured surface and knead gently. Pat into a 9 x 3/4-inch thick round. Using a 2-inch round cutter, cut out rounds. If dough is sticky, dip cutter in flour. Gather scraps and press into a 3/4-inch thick round. Cut out 12 biscuits. Place them touching each other in prepared pan. Bake for 15 minutes or until tops are firm. Serve warm Makes: 12 biscuits Although these look like they are made with whole wheat flour, the golden brown color comes from the vinegar. I like to serve the rolls hot from the oven with butter or softened cream cheese.
