2 pounds flank steak
1 cup papaya juice
1 teaspoon green peppercorn
1 teaspoon white peppercorns
1 teaspoon black peppercorns
1/3 cup olive oil
1/4 cup fresh lemon juice
1/4 teaspoon salt

Preparation / Directions:

cut 1/2-inch deep slits in several places of flank steak place into a glass baking pan pour papaya juice over steak cover and chill for 2-4 hours, turning once remove meat from marinade, pat dry combine peppercorns and press into both sides of steak remove steak to a clean baking dish cover and chill for 2 hours remove from refrigerator and bring to room temperature prepare a moderate charcoal fire or preheat broiler whisk together olive oil and lemon juice salt steak lightly on both sides grill or broil steak to desired doneness, turning once and basting with half of the lemon/oil mixture remove steak to a wooden cutting board brush with lemon mixture allow to rest for 5 minutes to settle juices slice across the grain, on the bias, into wide flat slices serve warm
