Mexican Beef Stir Fry

Ingredients:


1 Pound beef flank steak

2 Tablespoons vegetable oil

1 Teaspoon ground cumin

1 Teaspoon dried oregano

1 Clove garlic

1 medium red bell pepper -- cut into thin strips

1 medium Onion -- cut into thin wedges

1 medium jalapeno peppers cut into slivers -- (1 to 2)

3 Cups thinly sliced romaine lettuce
 

Preparation / Directions:


Cut beef flank steak into 1/8 inch thick strips.In small bowl,combine oil,cumin, oregano and garlic.In large non stickstick skillet over medium high heat,heat half the oil mixture until hot,reserving remaining half.Add red pepper,onion and jalapeno pepper stir fry 2 to 3 minutes or until crisp tender.Remove and reserve To same skillet,add remaining oil mixture stir fry half the beef strips 1 to 2 minutes.Remove and reserve.Stir fry remaining beef strips 1 to 2 minutes.Return vegetables and beef strips to skillet and heat through.Arrange lettuce on platter serve beef mixture on top,
