James Barber's Pepper Pitas And Hummus

Ingredients:


14 ounces chickpeas -- canned, drained, rinsed

3 cloves garlic -- minced

4 tablespoons peanut butter

1 medium lemon -- juice of

6 tablespoons yogurt

---pepper pitas

8 medium pita bread

4 tablespoons olive oil

1 dash salt

2 tablespoons pepper

2 tablespoons parsley
 

Preparation / Directions:


Combine all of the ingredients in a food processor and blend until smooth. If too thick add a little water, lemon juice or yogurt. Makes 2 cups Pepper Pitas Preheat oven to 400F. Cut pitas into quarters. Brush with the oil and sprinkle with salt, pepper and parsley. Bake until crisp, about 5 minutes. Makes 32 pitas Source James Barber's Peasant Alphabe
