Bon Appetit Vegetarian Chili With Chipotle Chilies

Ingredients:


1 cup chopped carrots

1 cup chopped red or green bell -- pepper

1 cup chopped onion

3 large garlic cloves -- minced

1 tablespoon chili powder

2 teaspoons ground cumin

28 ounces Italian plum -- tomatoes with juice,

15 ounces red kidney beans -- drained

15 ounces cannellini -- beans, drained

15 ounces black beans -- drained

2 tablespoons canned chopped chipotle -- chilies in adobo sauce
 

Preparation / Directions:


You guys can figure out the rest. Cook for 30 minutes, stirring, and add salt and pepper. I omitted 1 tbs oil at the beginning of this recipe- it was used to sauté the vegetables.
