Black Bean Relish

Ingredients:


15 ounces black beans rinsed and drained

1 large tomato finely chopped (1 cup)

1 small red bell pepper chopped (1/2 cup)

1 medium serrano chili seeded and finely chopped

1/4 cup red onion finely chopped

2 tablespoons white wine vinegar

1 tablespoons vegetable oil

1/4 teaspoon salt
 

Preparation / Directions:


1. Mix all ingredients in glass or plastic bowl. Cover and refrigerate about 1 hour or until chilled. 2. Stir relish before serving.
