Ma's Baked Beans

Ingredients:


2 cups Great Northern beans

1/2 teaspoon baking soda

1 medium ham bone or 2 ham hocks

1 small onion, chopped

2 teaspoons salt

1/4 teaspoon dry mustard

1/4 teaspoon black pepper

1/4 cup molasses
 

Preparation / Directions:


Pick over beans, wash and soak in cold water to cover, overnight (12 hours). Drain beans. Put them into a kettle or stock pot, cover with fresh water, add soda. Bring to a boil; reduce heat and simmer,covered, until tender(approximately 1 hour). Put beans in a 2-quart bean pot or oven proof casserole with the onion. Mix the salt, mustard, pepper and molasses in a little hot water. Stir into the beans. Bury the ham bone in the beans. Leave just enough water in the pot to cover the beans. Bake, covered, 4 hours in aa 300 degree oven. Add boiling water, as need to keep beans moist.
