Southwestern Style Black Eyed Peas

Ingredients:


1 can black-eyed peas

1 medium carrot -- diced

1/2 medium Onion -- diced

1/4 medium green pepper -- diced

1 stalk celery -- diced

3 cloves garlic -- minced or

1/2 teaspoon salt -- or to taste

1/4 teaspoon pepper -- or to taste

1/4 teaspoon tobasco or other hot sauce
 

Preparation / Directions:


Mix all ingredients together in a saucepan, and bring to boil. Simmer for at least 10 minutes, but 20 - 25 is better.
