Judy Bell's Humus

Ingredients:


16 ounces garbonzo beans

6 ounces tofu -- softened

1 teaspoon cumin -- ground

1 clove garlic -- or 2-cloves -- minced

1/4 cup onion -- chopped

1/4 cup parsley -- chopped

1 bottle tabasco sauce -- to taste

---optional---

1 bottle lemon zest -- to taste
 

Preparation / Directions:


Drain beans and process in a food processor or blender (or mash by hand). Only process to mush a bit and not make it perfectly smooth since additional processing will happen. Texture is good in this. Add Tofu (or bean liquid) and process to  just blend. Add Cumin, Lemon Juice (and zest if using), and a few drops Tabasco and process to just blend. Add minced Garlic and process to just blend. (The reason for mincing before adding to bowl is that garlic gets bitter the more you process it.) Add chopped Red Onion and process to just blend. (Onion also gets bitter with excessive processing.) Add chopped Parsley and process to just blend. You will still see flecks of parsley. Spread on everything including your finger.
