Classic Bean Soup

Ingredients:

1/4 cup vegetable oil
1/2 cup chopped red onion
4 medium sliced carrots
1 can spicy pinto beans
2 cans black beans
2 cans chicken broth
2 medium cooked chicken breasts
2 teaspoons cumin
1 teaspoon salt and black pepper
1 jar salsa and cheddar cheese
 

Preparation / Directions:

In large pot heat oil on medium high. Add and saute onions and carrot until tender. Add pinto and black beans. Stir well. Add broth and cumin. Stir. Chop chicken into chunks and add to pot. Simmer 10 minutes. Season with salt and black pepper. Serve hot in bowls topped with salsa and grated cheese. Approximately 5-12 minutes.
