Plantain Casserole

Ingredients:


2 medium Green Plantains -- sliced 1 inch thick

4 tablespoons Lemon Juice

2 Cup Peanut Oil

1 medium Tomato -- peeled and chopped

1 teaspoon Salt and Freshly Ground Black Pepper -- to taste
 

Preparation / Directions:


Peel and slice plantains 1 inch thick. Dip in lemon juice and saut‚ them in oil over low heat, stirring constantly. Add tomato and seasoning and transfer to an oiled casserole dish with a lid. Bake at 275ø for 1 1/2 hours.
