Creamy Beef Roll-ups

8 ounces Cream cheese, softened
2 1/2 ounces dried beef, rinsed
2 tablespoons Horseradish

Preparation / Directions:

Combine cream cheese and horseradish. Spread mixture on double dried beef slices; roll up. Chill and slice into 1 inch rolls. VARIATIONS: 1. Substitute 1/4 c. chopped green onions for horseradish. 2. Spread 1/2 t. mustard on the cream cheese mixture before rolling up : beef. 3. Try rolling up dried beef spread with cream cheese mixture (with or : without mustard) around a dill pickle spear. Makes about 40 pieces.
