Cheese Quesadilla

Ingredients:


1 tortillas flour tortilla -- (10 inch)

1 cup monterey jack cheese; shred -- loosely packed

1/4 cup cooked bacon; chopped -- loosely packed

2 tablespoons green onions -- chopped

1 tablespoon butter

1/2 cup lettuce -- shredded

1/4 cup pico de gallo

1 tablespoon sour cream

1 tablespoon guacamole

1/4 cup red or green salsa
 

Preparation / Directions:


Tools: Skillet, spatula, knife, measuring cup, measuring spoon. Heat skillet over medium heat and melt butter. Place tortilla in skillet, spread cheese all over tortilla, spread bacon and green onions all over cheese. When cheese melts and the bottom of the tortilla is golden brown, fold tortilla in half and remove from skillet. Cut the tortilla like a pie into 4 pieces. Place the pieces on a plate and spread the shredded lettuce on top. In a row on top of the lettuce, place the pico de gallo, sour cream and guacamole. Serve with the salsa on the side. Variations: You may also add 4 ounces of cooked chicken breast, cooked shrimp, or grilled beef. You may also use different cheeses for different flavors. Serve this dish as an appetizer before dinner or as a snack. Serves 1-2 (2 as an appetizer).
