Black Bean Quesadillas With Roasted Garlic

Ingredients:

2 cups black bean paste
1 head garlic -- (roasted for, 15 minutes at 350 degrees
2 cups cilantro
1 medium Onion -- chopped
20 milliliters raw garlic
1 cup pepper jack cheese -- grated
1 teaspoon salt and pepper
1 package corn tortillas
 

Preparation / Directions:

Black Bean Paste: Add 1 cup of soaked Black Beans, chopped onion, raw garlic, 1 cup of chopped Cilantro, salt, and pepper, into a medium sauce pan, add some water and boil until tender (1 1/2 to 2 hours). When beans are tender drain liquid, put in a blender, and blend until smooth. Quesadilla: Spread roasted garlic on one half of a corn tortilla and top with a thin layer of bean paste and cheese. Place on a flat cookie sheet in a preheated 350 degree oven for 3 to 4 minutes. Fold, turn over, and bake another 3 to 4 minutes. Cut into wedges, stack on a plate, garnish with cilantro, salsa, and SERVE.
