Diane's Antipasto A La Pizza

A beautiful, tasty salad constructed on a pizza pan, cut with a pizza cutter and served as an Antipasto or Appetizer or can be a main dish with crusty bread. Makes a delicious presentation.
 

Ingredients:


1 large pizza pan (14 inch) with curved sides

10 large green lettuce leaves

10 large spinach leaves washed and deveined

10 large round slices deli-sliced Virginia Ham

1/4 pound hard salami sliced thin

10 slices provolone cheese

3 large tomatoes sliced thin

1 medium green pepper, washed, seeded and sliced into rings

1 medium yellow pepper washed, seeded and sliced into rings

1 medium red onion sliced thin

1 jar drained mushrooms sliced

1 jar asparagus drained

1 jar pimentos or roasted red peppers drained and sliced

10 medium marinated artichoke heart halves

2 medium hard boiled eggs sliced

15 medium black olives...more if you prefer

2 cans flat anchovy filets drained (optional)

1 packages Cheese-garlic or garlic Herb dry salad dressing mix
 

Preparation / Directions:


Starting with lettuce, line the pizza pan with each ingredient. Layering lettuce than spinach, ham, cheese, salami....etc. finishing with olives. (Any other favorite salad ingredient may be used, example: drained oil packed tuna in chunks or pieces of broccoli florets decorously placed.) When finished, you have a beautiful salad wheel reminiscent of a pizza, that can be prepared several hours ahead, covered and refrigerated. Just before serving, pour salad dressing over all. Anchovies may be added to the top or served on the side if desired. Cut into 10 pieces with a pizza cutter and serve with a wedge-shaped serving utensil. Stand back and listen to the raves! Not only does this make a beautiful presentation, it also tastes wonderful and serves very easy.
