   1 large white cauliflower
  25 grams butter
4 green onions -- finely chopped
   2 tablespoons flour
 225 milliliters milk
     1/2 teaspoon salt
     1/4 teaspoon white pepper
   1 dash tabasco
     1/4 cup seasoned bread crumbs
   2 tablespoons grated parmesan

Preparation:

1. Cook cauliflower whole, in boiling, salted water, about 20 minutes. Drain & place in baking dish. 2. In small skillet, melt butter & saute green onions over medium-low heat for 5 minutes. Blend in flour & cook for 3 minutes over low heat. Slowly stir in the milk & simmer until smooth & thick, stirring constantly. Add the salt, pepper, & Tabasco & then pour the sauce over the cauliflower. 3. Sprinkle with the bread crumbs & cheese. In a preheated 190 øC oven, bake about 20 minutes or until slightly browned. Difficulty : easy. Precision : measure ingredients.
