Ingredients:

  2               cups  nonfat ricotta cheese
  1                cup  nonfat shredded mozzarella *
  1                cup  cooked chopped vegetables **
  1             recipe  basic pizza dough
 
Preparation:

In a bowl, mix together the cheese and vegetables. Divide dough into two batches. Roll dough to about 1/4 inch thick and place on a greased baking pan. Fill with half the cheese and vegetable mixture. Fold dough over and pinch edges together tightly. With a scissors, snip three small holes in top for air. Repeat for the second calzone. Bake at 350 degrees for about 45 to 60 minutes, until top is golden brown. It's ready when the sides bubble. Makes 2 calzone
