Corned Beef and Eggs

Corned Beef and eggs, with a hint of Italian style.
 

Ingredients:

  Amount  Measure       Ingredient -- Preparation Method

2         tablespoons   olive oil
1/2                     white onion finely minced
1         can           corned beef
5                       eggs lightly beaten with a fork
1         teaspoon      salt
1/2       teaspoon      black pepper
1/2       teaspoon      red hot pepper seeds (optional)
1/2       teaspoon      Anise seeds
                        Bread for sandwiches
 
Preparation:

Remove the corned beef from can and scrape off some of the fat. With a knife or fork break up the corned beef and set aside. In a large skillet, heat the olive oil, then add the minced onion and saute until transparent. Then add the corned beef and saute until the corned beef is soft, then add the Anise seeds, egg, salt, black pepper and red seeds. Mix well until eggs are firm. Make sandwiches and enjoy.
