one -- (6 ounce) jar
-- marinated artichoke
1 small head romaine lettuce -- torn
2 tablespoons roasted red peppers -- julienned
1 bunch -- bean or alfalfa
-- sprouts
1/2 cup slivered almonds
1/2 cup water chestnuts
3 radishes -- sliced in thin
circlets
2 green onions -- finely chopped
1/4 cup shredded mozzarella cheese
1 1/2 tablespoons white wine vinegar
1 tablespoon salad oil
pepper to taster -- freshly ground
1/4 teaspoon sugar
1 small garlic clove -- crushed
Preparation:
Drain artichokes, reserving the marinade. In a bowl, combine artichokes, lettuce, red peppers, sprouts, almonds, water chestnuts, radish, onion & cheese. Set aside. In a jar w/ a tight fitting lid, combine the rest of the artichoke marinade, vinegar, oil, pepper, sugar & garlic. Cover & shake well. Pour dressing over salad. Toss to mix & serve. Approximately 6 minutes.
